The module produces an HTML table with various CSS classes associated with each element.  The easiest way to get a fix on this is from your browser to do a "View Source" or "View Page Source".  You will see something like this:

<div class='mod_sef'><form method='post' action='#' name='_SimpleEmailForm_1' id='_SimpleEmailForm_1' enctype='multipart/form-data'><table class='mod_sef_table'><tr class='mod_sef_tr'><th class='mod_sef_th' align='right'>From</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><input type="text" name="mod_simpleemailform_field1_1" id="mod_simpleemailform_field1_1" size="40" value="" maxlength="255" class='mod_sef_input'/></td></tr><tr class='mod_sef_tr'><th class='mod_sef_th' align='right'>Subject</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><input type="text" name="mod_simpleemailform_field2_1" id="mod_simpleemailform_field2_1" size="40" value="" maxlength="255" class='mod_sef_input'/></td></tr><tr class='mod_sef_tr'><th class='mod_sef_th' align='right'>Name</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><input type="text" name="mod_simpleemailform_field3_1" id="mod_simpleemailform_field3_1" size="40" value="" maxlength="255" class='mod_sef_input'/></td></tr><tr class='mod_sef_tr'><th class='mod_sef_th' align='right'>Comments</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><textarea name="mod_simpleemailform_field4_1" id="mod_simpleemailform_field4_1" rows="4" cols="80" class='mod_sef_input'></textarea></td></tr><tr class='mod_sef_tr'><th class='mod_sef_th' align='right'>Please enter the following</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><img src='http://joomla.unlikelysource.org/captcha/captcha_1_638c017bb2d1011031b1af4609e7f6f6.png' width='200' height='80' class='mod_sef_captcha' /><br /><input name='mod_simpleemailform_captcha_1' id='mod_simpleemailform_captcha_1' type='text' size='5' maxlength='5' class='mod_sef_input' />&nbsp;Help us prevent SPAM!<input type='hidden' name='mod_simpleemailform_crsf_1' value='c464bd001c8601d3fe32c6506e1c7873' /></td></tr><tr class='mod_sef_tr'><th class='mod_sef_th'>&nbsp;</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><input type='checkbox' name='mod_simpleemailform_copyMe_1' id='mod_simpleemailform_copyMe_1' value='1' class='mod_sef_input' />Send me a copy</td></tr><tr class='mod_sef_tr'><th class='mod_sef_th'>&nbsp;</th><td class='mod_sef_space' width='10'>&nbsp;</td><td class='mod_sef_td'><input class='mod_sef_input' type='submit' name='mod_simpleemailform_submit_1' id='mod_simpleemailform_submit_1' value='Submit' title='Click Here to Submit the Form' />&nbsp;&nbsp;<input class='mod_sef_input' type='submit' name='mod_simpleemailform_reset_1' id='mod_simpleemailform_reset_1' value='Reset' title='' /></td></tr></table></form></div>

Now all you need to do is to modify the template's stylesheet, adding classes which control the width.  In the above example, you could add an entry for a class "mod_sef" and set the width to whatever is desired.  Alternatively you could add an entry for the class "mod_sef_table" which represents the table (in the above example).
